With a double smoked streaky rasher as the base
the stuffed chicken breast is rolled in the rasher.
With one Chicken Roulade finished the butcher takes a small
parcel of stuffing to place on the waiting flattened chicken breast.

It’s important to roll the chicken & stuffing tightly in the smoked streaky
or back rasher to ensure it does not unravel during cooking.
